My husband is a huge Mexican food lover. So basically any time I see the word Enchilada in a recipe title I have to try it out. Some are a hit, some not so much… but when we tried out this recipe by Paleo Leap for chicken enchilada stuffed squash it hit the top of the charts with not only my husband, but the rest of the family too. The combination of the enchilada sauce with the chicken and squash is amazing and so easy to make! A must try!
