I’ve always been a fan of hummus and and I’ll tell you a secret: when I first started Paleo… I still ate hummus. I knew that hummus was a healthier snack option and I have no idea it wasn’t Paleo approved. Until, you know, I actually thought about what hummus is usually made of. Beans. I was devastated, thinking I’d never have yummy hummus again. Until I came across this Autoimmune Paleo recipe for roasted garlic cauliflower hummus. It’s so good!
I’ve said it before but I’ll say it again – how great are muffins? Muffins are an awesome way to have a quick breakfast or snack, and doing them Paleo actually makes that breakfast or snack healthy. Sometimes I just want a quick and easy recipe – but quick and easy doesn’t mean you have to sacrifice flavor and taste as well. I love this recipe put together by Mind Body Green. I’ve done sweet potato pancakes before but not like this. Add in those mushrooms and serve it next to the spicy skillet spinach, and you have a really full meal that will leave you satisfied for some time.
I love pancakes. I love bacon. So of course when I saw the recipe by Bacon Today for Paleo Bacon Pancakes I had to stop dead in my tracks. The combination of flavors to make these pancakes is marvelous. Going dairy free one of the biggest things I missed most was a bowel of yogurt with granola on top. It’s a simple breakfast, filling, sweet, crunchy… and totally not Paleo.
