I’m still in my soup kick – soup is a great and easy meal that makes you feel warm, cozy, full, and just happy. Soup really is the classic comfort food! If you are a soup fan then you are bound to love this soup by Paleo Paln. The delicious leafy greens and garlic are perfect for a nutritious and flavorful soup. Plus the fact that it is thickened with eggs makes it seem so creamy without any of the dairy. You’ll love this smooth delicious soup – and of course like all soups, it’s super easy to make.
Butternut squash is one of my favorite of squashes. It’s a little more savory and a little less sweet then some of your other squashes and just has such a great flavor. When you pear it like Paleo Leap does with turnips then you have a real treat! This is a veggie dish that I love to put together and luckily so far everyone I’ve served it to has loved it just as much as I have. Serve this with any kinda of protein for a great complete and super healthy meal.
Coleslaw is one of those classic side dishes that can really help lift a meal. The crunch and bite of the vegetables is delicious! I always thought there was only one kind of ‘slaw’ out there in the world… it wasn’t until I saw Paleo Leaps recipe for this red cabbage, cranberry, and pecan slaw that I realized there was so much more to the ‘slaw’ family group. This is by far my favorite slaw and perfect to add to some delicious roast beef! Yum! I can’t get enough.
Let’s face it – when you hear brussels sprouts there is a small part of you that still automatically things “ew”. For some reason brussels sprouts has gotten a bad reputation for taste. Which is just crazy because if they are cooked right they are one of my most favorite of vegetables. One of my favorite recipes for brussels sprouts is Paleo Grubs Garlic Roasted Brussels Sprouts recipe. Seriously you wont every thing ‘ew’ again when you think of this superfood vegetable.
Okay… let’s face it. When steak is involved you just can’t go that wrong. I love steak. In almost any form. When I first heard about Pop Sugar’s recipe for Paleo Steak Wraps I knew it was something I had to try… and then when I did try it, I couldn’t get enough of it. The combination of the rich steak and delicious vegetables makes this a go-to meal here in our household.
My husband used to live in the south. When we were dating he introduced me to fried okra. I had never even heard of okra before (Sad, I know). I instantly fell in love. When we started to eat Paleo I was bound and determined to find a good fried okra recipe for him since it was one of his favorite treats to have. When I came across Paleo Cajun Lady’s recipe for fried okra in red palm oil I knew I had found the perfect recipe.
A good chicken pot pie is one of those recipes I’ve been trying to perfect for some time – especially a Paleo version. Getting the crust just right – to be crisp, flakey, buttery and good. To get the filling to have the perfect combination of vegetables, chicken, and gravy is key. Luckily for me Paleo Parents did all the hard work for me and have put together a delicious and wonderful Paleo chicken pot pie recipe that hits every key point on the head.
Something many seem to struggle with these days is having a healthy amount of vegetables in their diet. Even my family struggles with this from time to time. While our main course always seems to be on point and healthy… we struggle adding in those healthy veggies on the side. That is why I love this delicious and super easy to make roasted rosemary carrots with onion side dish recipe.
Not being the biggest fan of Ccauliflower I was a bit skeptical when I saw The Ultimate Paleo Guide’s recipe for cauliflower cakes… but always wanting to give new recipes a try I decided to cook them up and boy am I glad I did. Not only are these super crispy like the title claims, they are filled with flavor and perfect for any snack, appetizer or side dish!
I love finding ways to incorporate veggies into our meals without my kids knowing. While the majority of the time they will eat pretty well when it comes to veggies, some days I know it will be a fight… and let’s face it, if I can avoid that fight then I will. Well if you are like me and looking for ways to get your kids more veggies through out the day then take a look at Athletic Avocado’s recipe for these delicious apple pancakes that are packed with all sorts of veggies!
