Paleo Christmas Pudding
Christmas can be a pretty crazy day filled with gifts, family activities, and usually a lot of cooking. I remember as a child anytime my mom said we were having some type of casserole I’d groan on the inside. For some reason the associated the word casserole with goopey stuff in a baking dish that usually was trying to hide some type of veggie I didn’t like. Turkey is a great protein that sadly doesn’t seem to get used as much as it should – unless it’s around Thanksgiving. One of my favorite things to do with a turkey breast is to stuff it! Butternut squash is one of my favorite of squashes. It’s a little more savory and a little less sweet then some of your other squashes and just has such a great flavor. This is a veggie dish that I love to put together and luckily so far everyone I’ve served it to has loved it just as much as I have.
